🦐🌱 Shrimp and Tomato Soup with Fresh Dill

RECIPE & INGREDIENTS FOR 2 SERVINGS

1 onion | 2 garlic cloves | 3 tomatoes | 1 leek | 15g fresh dill  | 160g shrimp | 150ml culinary cream | 3tbsp white wine vinegar | 500ml vegetable broth

  1. Prepare 500ml of vegetable broth.

  2. Finely chop the onion and press or finely chop the garlic.

  3. Cut the tomatoes into cubes and slice the leek into half rings.

  4. Remove the dill leaves from the stems.

  5. Heat 1 tablespoon of olive oil in a sauté pan over medium-high heat.

  6. Sauté the garlic and onion for 1 minute.

  7. Add the shrimp and cook for 2 - 3 minutes while stirring.

  8. Deglaze the pan with 1 tablespoon of white wine vinegar (see Tip below).

  9. Add the tomatoes, leek, culinary cream, half of the dill, and the vegetable broth to the pan with the shrimp.

  10. Let it simmer gently until the shrimp are cooked (usually a few minutes).

  11. Season with salt and pepper to taste. Enjoy!

TIP: If you have white wine, you can replace the white wine vinegar with white wine for more flavor! - If you like a more enhanced fishy flavor, replace the vegetable broth with fish broth.
