RECIPE & INGREDIENTS FOR 4 SERVINGS

500g mixed ground meat | 2 carrots | 2 garlic cloves | 1 onion | 1 zucchini | 250g button mushrooms | fresh basil | 600ml milk | 450ml passata | 750ml canned chopped tomatoes | 24 lasagna sheets | 45g butter | 45g all-purpose flour | 400g grated cheese | nutmeg | oregano

  1. Peel and finely chop the onions. Crush the garlic into a paste.

  2. Place a large pot over medium heat. Add a dash of olive oil.

  3. Brown the ground meat in the hot olive oil. Stir regularly. Once the meat has color, add the onion and garlic to the pot and sauté.

  4. Peel and finely dice the carrots. Do the same with the zucchini (no need to peel it). Add them to the pot.

  5. Clean the mushrooms using a dry brush, then cut them into coarse pieces and add them to the pot.

  6. Allow the meat and vegetables to continue cooking over low heat. Add the oregano and basil leaves to the pot.

  7. Pour in the canned chopped tomatoes and passata. Let the sauce simmer for an additional 10 minutes over low heat. Taste and season the sauce with salt and freshly ground pepper. You can also add dried provencal herbs and 1 vegetable bouillon cube (It's advisable to slightly overseason, as the pasta in the lasagna tends to mellow the flavors).

  8. While the sauce simmers, prepare the cheese sauce. Melt the butter in a saucepan, add the flour, and stir until slightly golden and aromatic.

  9. Gradually pour in the milk while stirring with a whisk. Continue stirring until the sauce thickens and becomes smooth.

  10. Remove from heat, mix in half of the grated cheese, and season with pepper, salt, and nutmeg.

  11. Preheat the oven to 180°C (356°F).

  12. Spread a thin layer of cheese sauce on the bottom of a baking dish.

  13. Place a layer of dry lasagna sheets on top, arranging them like roof tiles. Make sure you do not overlay them too much, as this might result in overly thick layers.

  14. Spoon a layer of the meat and tomato sauce mixture on top, spreading it evenly.

  15. Add another layer of lasagna sheets, followed by another layer of the meat and tomato sauce.

  16. Continue alternating layers until the baking dish is nearly full, finishing with a layer of the meat and tomato sauce on top.

  17. Pour the remaining cheese sauce over the lasagna and spread it evenly. Sprinkle the remaining grated cheese on top.

  18. Bake the lasagna in the preheated oven for 30 minutes at 180°C (356°F). Enjoy!

TIP: For extra flavor, you can add a splash of red wine to the tomato sauce during simmering. If you're preparing the lasagna in advance, cover the dish with plastic wrap and refrigerate.
