RECIPE & INGREDIENTS FOR 2 SERVINGS

½ watermelon | 150g feta cheese | 15g fresh mint | 30g red onion
30g pistachios | ½ lime | olive oil | balsamic vinigar | 2tbsp honey

  1. In a large mixing bowl, combine the cubed watermelon, crumbled feta cheese, torn mint leaves, sliced red onions, and chopped pistachios.

  2. In a separate small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, lime zest, lime juice, salt, and pepper until well combined.

  3. Drizzle the dressing over the watermelon mixture and gently toss to coat all the ingredients evenly.

  4. Allow the salad to marinate in the refrigerator for about 15-20 minutes to let the flavors meld together.

  5. Just before serving, give the salad a final toss and transfer it to individual plates

  6. Garnish with a few extra torn mint leaves and a sprinkle of chopped pistachios and enjoy this refreshing and flavorful summer salad.
